Can we put a keyed deadbolt on both sides of the back door for extra security?

On a door people leave through while the building is occupied, the door needs to open from inside with one motion and no key, so a key-both-sides bolt is not the right tool there. Security is added instead with a heavy-duty exit device and a reinforced strike, a keyed trim outside, an alarm contact, or a door position sensor on the access system, all of which keep the way out clear.

My key turns all the way round but the bolt stays put. What has broken?

The key and cylinder are doing their job; the bar behind the cylinder that drives the bolt, called the tailpiece or cam, has broken, slipped or twisted out of engagement. It is a small part. The locksmith retracts the bolt through the mechanism or removes the cylinder to reach it, then fits a tailpiece of the right length and profile. Your cylinder and keys are unchanged afterwards.

Is there anything different about steel or fibreglass doors?

The lock hardware is the same; the door construction changes the method. Steel and fibreglass doors have a wooden or composite block inside the lock stile, and existing bores are used wherever possible. Where a new deadbolt must be added, the locksmith drills with a jig and bits suited to the skin so the hole is clean and square, and fits an edge plate designed for that door. Insulated doors also move less with humidity, so alignment tends to hold well.

Our property has a lot of separate gates. Is there a way to manage that with fewer keys?

Yes, a master key arrangement is a common answer: individual gates each keep their own key for day-to-day use, while one additional master key opens all of them for whoever manages the whole property, such as an owner or a maintenance contractor. Setting this up means recombining or replacing the cylinders involved so they share a compatible pinning structure, which is planned out before any single gate's lock is touched, so the system works as intended once finished.
